Taylor Sheridan's TV western Yellowstone has proved to be a runaway hit—and the same can be said for the two spinoffs 1883 and 1923. With a stellar cast including Harrison Ford, Helen Mirren, Tim McGraw, and Faith Hill, the two Paramount hit shows showcase talent that represents the entire spectrum of age and experience. Dawn Olivieri, 42, plays Claire Dutton on 1883. The actress loves working out outdoors. "I tend to be most inspired to work out within a location that contains something impressive," she says. "The mountains, a sunrise, a sunset, a waterfall, the ocean. You can pull energy from them while you do your exercises."

Julia Schlaepfer, 28, plays Alexandra on 1923. The actress embraces her physique, and has learned to have confidence in her style. "Bodies are meant to change, so I think that's beautiful," she says. "I wore a Paolo Sebastian dress to The Politician première], and I was worried because it showed a lot of cleavage. Then I thought, 'This is crazy. We all have 'em!'

Isabel May, 22, plays Elsa Dutton on 1883. The actress enjoys the natural look which is part of her role. "Taylor [Sheridan] said from the very beginning, 'I want everything to be authentic.' I mean, women didn't start shaving until the 1920s," she says. "He really wanted that to be an aspect of the show, and so I was more than happy to oblige. I'm lucky to be a part of it. I don't really know how I've had this opportunity. It's difficult to find such depth and growth in a character especially at her [Elsa] age, considering the genre as well, being a Western it's usually from a male perspective."

Helen Mirren

Helen Mirren, 78, plays Cara Dutton on 1923. The legendary actress recommends moderation when it comes to diet. "Take control of your diet and find what makes you feel good," she says. "I'm the first one at the fish and chips, but what you're putting inside your body does influence how you feel about yourself, so start there."

Harrison Ford

Harrison Ford, 81, plays Jacob Dutton on 1923. The actor avoids eating meat and dairy, and sticks to fish and vegetables. "I just decided I was tired of eating meat," he says. "And I know it's not really good for the planet and it's not really good for me."

Aminah Nieves

Aminah Nieves, 27, plays Teonna Rainwater on 1923. The actress is passionate about the power of meditation. "I knew that in order to be part of the industry, I needed to focus on my mental health and change the way I viewed myself," she says. "My best advice for anyone is to try meditation. Use the gift of the medicine that is around you, harness the beauty that we tend to take for granted, and be as forgiving of yourself and others as nature is of us. Step into that fear and demand that it listens to you."

Jerome Flynn

Jerome Flynn, 60, plays Banner Creighton on 1923. The actor follows a vegan diet. "I went vegan, but I found it very hard to be vegan at that time – I didn't really know myself how to look after myself in terms of plant protein and it started to drive me a bit mad, so I came off the vegan train and was vegetarian, but I was practically vegan," he says. "I stayed with goat's cheese, thinking naively that there was less cruelty involved in the goat industry. But then, my friend, the wonderful Juliet Gellatley [founder and director of vegan charity Viva] came to stay and shared a campaign she was doing about the goat farming industry. It made it very explicit the kind of terrible cruelty that was going on, so I came off and I've been vegan since."

Timothy Dalton

Timothy Dalton, 77, plays Donald Whitfield on 1923. Dalton is an accomplished dancer, and has shown off his skills on The Crown. "I'm your man for a waltz and I've even danced the tango with Jennifer Connelly in The Rocketeer, without music I have to say," he says. "But this one was all changing beats and rhythms and the rest of it. It's not something I was confident about and had Lesley [Manville] known how unconfident I was, as she was hurtling through the air with her feet off the ground, she wouldn't have done it."

Jennifer Ehle

Jennifer Ehle, 53, plays Sister Mary on 1923. The actress says she learned to cook while staying in Scotland for her wedding. "Every day I got some cookbooks from the library in Blairgowrie," she says. "I'd never really done much cooking, but we'd pick out what I'd make and then we'd walk into town to the grocery store and the butcher and the fishmonger, buy whatever it was, then I'd go home and cook and practice. We ate well and walked a lot. Our landlords called us the dormice because we were so in love and so happy we were hunkered down and they didn't see us very much. It was very romantic and lovely."

Michelle Randolph

Michelle Randolph, 25, plays Elizabeth Strafford on 1923. The actress fully embraced the ranch outdoors lifestyle during filming. "We were riding horses on our off days and spending time together," she says. "I actually have gone back and forth about [the idea of what place I feel suits me most] a lot. I kind of confuse myself. I love cities, I love the hustle and bustle and how everything is available and right there. At the same time, I think I am happiest, not to sound cliché, but when I'm in nature. It just feels like you're taking a step back and the real priorities in life are health and wellness and you can meditate and not hear cars honking [laughs]! I do think it's a balance. I could spend 6 months in Montana and then I need 6 months in the city too. I'd like to think of myself as a well-rounded person in that regard."

James Badge Dale

James Badge Dale, 45, plays John Dutton Sr. on 1923. Dale is no stranger to hardcore training and diets for a role. "If I run six miles every day, I burn 1,200 calories and I'm at zero," he says. "I've been eating a lot of vegetables, chicken, fish, nuts and berries. I eat like a bird."

Tim McGraw

Tim McGraw, 56, plays James Dutton on 1883. The singer works out with his whole team when he's on tour. "We do a big CrossFit training session in the afternoon that usually goes from an hour to an hour and a half. It depends on how everybody holds up," he says. "It starts with 10 or 15 people; it ends with four or five sometimes. That's our afternoon workout. Then we go get showered up and have dinner, and get ready to do a show."

Faith Hill

Faith Hill, 55, plays Margaret Dutton on 1883. The singer enjoys a healthy, protein-packed diet. "I don't diet but I do watch what I eat," she says. "For lunch, I usually have a Greek salad with grilled chicken. I love salads for lunch. It's light, delicious and good for you. I vary the protein and sometimes use salmon instead of chicken."

LaMonica Garrett

LaMonica Garrett, 48, plays Thomas on 1883. The actor works hard to stay fit and strong. "I do maybe four days per week," he says. "It will be different each day. If I'm doing legs, I'll do core. If I'm doing back, I'll work my core another way. If I'm doing chest, I'll do core another way, so just something with core every day, and diet. You know, abs, or most of it is nutrition in the kitchen, so I just have to modify the way I eat and it helps."

Sam Elliott

Sam Elliott, 78, plays Shea Brennan on 1883. The actor refuses to allow technology to run his life. "I don't have email," he says. "Twitter, Facebook — everywhere you look, people are looking at their hands. In restaurants, it's like you're sitting in a patch of jack-o'-lanterns because everyone's face is lit up by their phone. Nobody's relating to each other."
