Overnight Oats For Breakfast
Flores' go-to breakfast is delicious overnight oats with blueberries. "Beyond their tangy sweetness, blueberries offer a wealth of health benefits," says Anya Miller, a Mayo Clinic dietitian, who says blueberries are rich in heart protective compounds called anthocyanins. "Blueberries, in particular, have about 25 different anthocyanins, whereas other berries might just have two or three. Anthocyanins have been shown to help lower the risk of developing coronary heart disease. "And that could be due to the reduction in arterial stiffness and blood pressure," says Miller. "A half cup is a serving of blueberries. They don't require any slicing or peeling. You can just pop them in your mouth for the benefits."
She Loves Avocado Toast
Flores enjoys a big breakfast of avocado toast, eggs, and potatoes to kickstart a busy day. "Avocados are an excellent source of monounsaturated fat and vitamin E, and are a good source of folate," says registered nutritionist Jo Lewin. "They also supply more soluble fiber than other fruit and contain a number of useful minerals including iron, copper and potassium."
Grilled Chicken and Vegetables
A typical lunch or dinner for Flores is grilled chicken with vegetables, rice, and hummus made from chickpeas. Chickpeas are considered a whole protein as they contain all nine essential amino acids. "Chickpeas are also an excellent source of non-animal protein," says Patricia Bridget Lane, RDN, LDN. "They're great for vegetarians and vegans." Chickpeas are also high in vitamins A, E, and C. "That's why they reap a ton of health benefits. These little tiny peas are just packed with nutrition."
She Snacks on Apples
Apples with almond butter are Flores' go-to healthy snack. "Apples are rich in polyphenols, protective plant compounds, one of which is a flavonoid called quercetin," says registered nutritionist Nicola Shubrook. "Research by the American Journal for Clinical Nutrition found that those with higher quercetin levels (mainly through eating apples) had a lower risk of several chronic diseases including heart disease and even asthma."
She Loves Salad
Flores enjoys healthy, delicious salads, which are a great way to incorporate more fiber into your diet. "You will become more regular because you are eating a high-fiber diet," says registered dietitian Andrea Berez. "Eating fiber-rich foods helps move the contents of the large intestine along more quickly. The RDA for fiber is 25g/day for women and 38g/day for men. One should increase fiber gradually or risk abdominal discomfort and bloating."
