Nguyễn loves seafood, especially lobster, shrimp, clams, and sushi. "Shellfish are high-quality protein sources—just like land animals—meaning they have all the essential amino acids," says Faye Dong, professor emerita of food science and human nutrition at the University of Illinois. "Moderation goes a long way."

Fresh Salads

Nguyễn enjoys fresh salads made with red cabbage and pine nuts. "The salad bar is a veggie and fruit lover's paradise. From mounds of crunchy delights to the sweet variety of fruits, you will never run out of options. While the salad bar is filled with what you would expect — toppings for your salad — it can still be tricky to navigate some of the less healthy options provided," says the Mayo Clinic.

Pasta

Nguyễn eats so much pasta, at one point she realized she was enjoying it three times a day while traveling. "One carbohydrate serving is about the size of a hockey puck. Half a cup of whole-grain cooked pasta equals one serving, or about 70 calories. If pasta isn't your thing, picture a slice of whole-grain bread instead," says the Mayo Clinic.

Berries For Dessert

Nguyễn loves fresh fruit, especially strawberries and blueberries. "Vitamin C works to boost your white blood cell production, and it also reduces inflammation," says Megan Byrd, RD from The Oregon Dietitian, tells Eat This, Not That! "This allows your body's organ systems, including the immune system, to work more efficiently."

Lots of Walking

Nguyễn posts several social media reels of herself exploring exotic new locales on foot. "The faster, farther and more frequently you walk, the greater the benefits. For example, you may start out as an average walker, and then work your way up to walking faster and walking a mile in a shorter amount of time than an average walker, similar to power walkers. This can be a great way to get aerobic activity, improve your heart health and increase your endurance while burning calories," says the Mayo Clinic.
