Gascoigne loves whipping up delicious, plant based meals with vegetables like sweet potato and cauliflower. “Cauliflower is a source of choline, an essential nutrient we need for mood, memory and recall,” says registered nutritionist Kerry Torrens. “As such, it is a key building block of acetylcholine, a chemical messenger involved in signaling the central nervous system. Choline is also essential for brain development.”
2. Protein For Breakfast

Gacoigne enjoys eggs on avocado sourdough toast with pesto for breakfast. “Traditional sourdough undergoes a slow fermentation process, the result of which is an increase in the bioavailability of the bread’s vitamins and minerals,” says registered nutritionist Nicola Shubrook. “This process also starts the breakdown of protein (including gluten), making sourdough easier to digest. Research suggests that the fermentation process improves the bioavailability of fiber and minerals. This is because a naturally occurring compound found in grains, called phytic acid, is broken down and this enables us to access the grain’s nutrients more readily.”

Gascoigne loves to put together beautifully-presented smoothie bowls with fresh, nutritious fruit like strawberries. “Strawberries have a low glycaemic index (GI) and as such help moderate blood sugar release,” says registered nutritionist Jo Lewin. “Studies suggest that a diet with plenty of low GI foods may be beneficial for weight management and for reducing the incidence of obesity-related diseases. Strawberries are also low in calories, yet sweet tasting so may be helpful as a sweet fix.”
4. She’s Had Body Image Struggles
Gascoigne has dealt with body image issues before but feels more calm and confident now. "I have body dysmorphia so I am never going to be entirely happy with the way that I look. It is in my nature to find fault with some aspect of my appearance,” she says. "But I am in the best shape of my life and I am as happy as I am ever going to be with my weight and body shape."
