She Eats A "Rainbow Diet"

Brinkley eats a lot of colorful foods in her diet. On her Instagram story, she posted a photo of her "rainbow diet", which includes a salad, fruits, and stuffed peppers. In an interview with Shape, Brinkley said, "For many, many, many years, I've always said go for as many colors as possible in a day. That's my main concept for making sure my kids get all the nutrients—making sure the deep greens, yellows and reds and purples, all of that."

She Invests In Wellness

For Brinkley, wellness is extremely important. She says that wellness is a lifestyle for her, and that she puts a lot of time and investment in it. Brinkley told The Cut, "For me, [wellness is] a lifestyle, it's a foundation for your future. Because your health is your greatest wealth. I really think that's something everybody needs to invest in."

She's Vegetarian

Brinkley is open about enjoying a vegetarian diet. She says that she is an animal lover, and that this pushed her to cut out meat. Brinkley says that she's also tried several other meat-free lifestyles over the years, but has stayed constant with her vegetarian diet. "Over the years I've been a vegan, I've been a macro-biotic, I've been a lacto-ovo," she said to The Cut. "The one constant since the day I stopped eating meat was that I haven't eaten any red meat or fowl."

She Did Research, Before Changing Her Diet

Before Brinkley became a vegetarian, she had to do a lot of research. She knew that she'd be cutting out a major source of protein in her diet, and wanted to make sure she'd still be eating a balanced diet without meat. "When I became vegetarian I started reading books right away because I knew that I had to replace the protein and figure out what to do," Brinkley told The Cut.

She Loves Oatmeal, Raw

Brinkley tells Shape that she eats pretty healthy each day. For breakfast, the model's go-to is oatmeal, and she loves to put other healthy ingredients, like berries, in it. Brinkley also says that she enjoys it raw. "I rarely have time to cook it, so I just eat it raw. Then I'll pour some flaxseeds on top of that and maybe a little wheat germ, then I'll grab a couple of handfuls of blueberries, blackberries, raspberries and rinse them off and toss them in."
