1. Eggs Once a Week

Macpherson sticks to a mostly plant-based diet with the exception of occasional eggs and fish. “I like a poached egg on spinach once a week,” she says. “The other days, I alternate between just fresh fruit until lunchtime, or a chia or flaxseed pudding (but never within 2 hours of eating fruit).”
2. Seasonal Produce

Macpherson likes to shop locally for seasonal produce. “I shop seasonally and locally for organic, raw food at the farmer’s market,” she says. “I believe in supporting local businesses and I know the microbiome works best when we eat according to what is available to us in each season. I shop at The Coconut Grove Farmers Market, but my favorite is Paradise Farms, which is located at Sacred Space in Miami.”
3. Greens For Lunch

Lunch is something simple and healthy. “I generally always have greens with whatever I eat at lunch, which is often a vegan salad with a base of pulses, lentils or quinoa,” Macpherson says. “I load it up with leafy greens and other vegetables, especially kale, spinach, sprouts and rocket.”
4. Homemade Almond Milk

Macpherson makes her own almond milk and oat milk. “In my fridge, I always have Suja Juices and homemade almond milk and oat milk on hand,” she says. “I snack on raw activated nuts such as brazil, almond, walnut, coconut yogurt, my homemade chia pudding, as well as my homemade raw tahini, nori crackers from the dehydrator and vegetable sticks with hummus. I also save time by preparing bags of vegetables and sprouts for juicing. Then there’s my son’s fridge which is a different story – think eggs, muffins, wine, meat, beer, crumbed chicken, and Oreo cookies.”
5. Fish For Dinner
While Macpherson follows a mostly raw vegan diet, she enjoys fish. “My evening meal sometimes consists of fresh line-caught fish with lots of greens, salad or vegetables,” she says. “Or sometimes I will have just vegetables. I prefer to eat raw vegan as much as possible, and use a dehydrator which is a fabulous preparation alternative.”
