Former Miss Ireland Roz Purcell loves to explore her country. She recently spent time at the beaches of Donegal. Purcell shared a highlight video on Instagram. In it, she went for a swim early morning. She captioned the post, “The best sunrise dip spot in 📌Donegal? My money is on here 😮😮😮 📍The Boat Strand. 1. She Loves Organic Food
Purcell shared some of her fitness and wellness tips to Rude Health Magazine. She says that her diet has a lot of organic foods in it. "I don’t advocate any particular diet,” Purcell reveals. “For me it’s all about wholefoods. Breakfast varies a lot. After a long cardio session I might have porridge with plant milk, egg whites, stevia and fresh fruit. Before training I might have eggs, avocado and salmon then carbohydrates after.”
2. She Occasionally Incorporates Carbs
Purcell doesn’t fear carbs. She tells Rude Health Magazine that she incorporates carbs into her diet when she feels like she needs to. “I am quite scientific about it,” Purcell explains. “I’m not fearful of carbs, but I eat them at the right time for my body and it depends where I am with training.”
3. She Eats Healthy Snacks

Purcell shared some of her favorite snacks to Rude Health Magazine. "I eat lots of almonds, usually toasted or dehydrated. Medjool dates give me an energy burst if I am cycling. I love making my own protein bars and these are easy to carry around. I love eating fruit, but it depends on what’s handy and seasonal. In summer I eat a lot of Irish berries and in the autumn I eat a lot of apples. I choose Irish vegetables, very fresh and in season. A good snack is cucumber dipped into a tahini dressing or cashew butter. Obviously we don’t grow bananas in Ireland, so I have to make an exception there."
4. She’s Found A Healthy Balance
Purcell opened up about her wellness journey on Instagram. She says that she has found a balance when it comes to fitness. “I used to train cause I hated my body, as punishment for eating,” she writes. “I over trained, I got anxious if I didn't train or missed a day because I needed to always be in a training ‘surplus.’ I constantly wanted to change my body in order to feel more worthy, successful, likeable. I've worked pretty hard on my relationship with my body & I went and learned a lot about training/ & importantly recovery. Now, I train cause I love my body; I train to get strong, get faster, move better.”
5. She Does A Variety Of Workouts
Purcell tells Rude Health Magazine that she does a variety of things to stay in shape. "I do a bit of everything because variety keeps it interesting. I box, cycle, run, weight train and I swim in the summer. I try to do some exercise every day and on a rest day I might go for a walk. I think it’s important to listen to your body. My family are into triathlons and I will sometimes do a half-distance triathlon, but always in the summer when it’s a bit warmer."
