1. Strong Over Skinny

When it comes to her diet, Carson focuses on health and wellness. “I love food and will never starve myself to make my body look a certain way,” she says. “It’s all about being healthy on the inside that matters and getting whole foods to keep you happy and energized. If you think starving yourself is the way to go, it’s not. Actually, the more healthy foods you eat, the faster your metabolism gets – therefore you burn more calories.”
2. Fish Please

One of Carson’s go-to healthy (and delicious!) dinners is omega-3-filled grilled salmon with asparagus and sweet potato. “People who eat omega-3s in their diet may have less plaque buildup in their arteries, lowering the risk of heart attack and stroke,” says Cleveland Clinic’s Anna Taylor, MS, RDN, LD. “Omega-3s lower triglyceride levels and may slightly raise ‘good’ HDL cholesterol levels.”
3. No Keto or Vegan Diet

Carson tried the keto diet and didn’t like it. “I’ve done keto before, and I felt really gross,” she says. “I did lose weight on it, but my skin broke out. I have eczema and my eczema was super, super bad. I think I have an allergy to dairy and cheese, so I try to stay away as much as I can now.” A vegan diet didn’t work either. "I just felt like I lost all my muscle because I wasn’t getting the right protein," Carson says.
4. Progress, Not Perfection

Carson gave birth to her first child in 2021 and opened up about her postpartum struggles. "Progress not perfection,” she said. “Being a dancer growing up & even throughout adulthood (especially throughout adulthood) I’ve always been self conscious about my weight and how I looked. I’ve struggled with this & that’s why I was hesitant to post these photos-I didn’t feel I looked a certain way, 'good enough' & that was a sad thought to me. I’m learning to celebrate my body the way it is now and celebrate the small successes to a HEALTHY body, spirit, and mind.”
5. Light Lunch
Carson keeps her food intake light in the middle of the day. “I’ll grill tilapia and I’ll just do a pre-made salad from Whole Foods,” she says. “The tilapia is easy to do—you can keep it in the freezer for forever, thaw it, and then you can just grill it easy.”
