In an interview with Shape, Brinkley said, “For many, many, many years, I've always said go for as many colors as possible in a day. That's my main concept for making sure my kids get all the nutrients—making sure the deep greens, yellows and reds and purples, all of that.”

She knew that she’d be cutting out a major source of protein in her diet, and wanted to make sure she’d still be eating a balanced diet without meat. “When I became vegetarian I started reading books right away because I knew that I had to replace the protein and figure out what to do,” Brinkley told The Cut.

Brinkley tells Shape that she eats pretty healthy each day. For breakfast, the model’s go-to is oatmeal, and she loves to put other healthy ingredients, like berries, in it. Healey loves seafood, especially sushi (although she jokes that she can’t handle adult chopsticks). “Sushi can be a healthy choice, but it depends on the type you choose and the ingredients used,” says registered nutritionist Nicola Shubrook. “Oily fish, such as salmon, provides omega-3, which is an essential fatty acid and has to be obtained from your diet. The World Health Organization recommends eating 1-2 portions of oily fish a week, so sushi may be a delicious way to help reach these targets.”

1. She’s A Vegetarian, But A Flexible Vegan

Brinkley is an animal rights activist, works with PETA, and is open about being a vegetarian. Brinkley told Harper’s Bazaar, "I haven't touched a piece of meat since I read a graphic description of Chicago's slaughterhouses when I was 12.” However, she told The Cut that she occasionally follows a vegan diet, with some conditions. She jokes, “I call myself a flexible vegan because, you know, Italy exists. Mozzarella and pasta exist. In France, I may have to have a piece of Camembert, you know. Un petit sandwich au fromage.”

2. She Starts Her Day With Lemon Water

Brinkley has a special drink that she likes to start her day with. She tells The Cut, “I start every day with warm water and lemons. It’s something I picked up on my Instagram.” Brinkley sometimes will add other things to her beverage. She says, “Some days I alter it, and I get fancy and I put a little bit of mānuka honey on the rim of the glass, turn it upside down, and dump it in red cayenne pepper. Then I put the lemon juice in and then the hot water. That’s when I have a little time. I figure that the pepper gets my system all revved up, and the lemon water gets everything flowing through.”

3. She Eats A Large Healthy Breakfast

Brinkley revealed her typical diet to Harper’s Bazaar, and her breakfasts are quite large, but are very healthy. “I have sheep's-milk yogurt from Old Chatham Sheepherding Company mixed with organic blackberries, blueberries, raspberries, papaya, chia seeds, raw oatmeal, and walnuts. If I want protein, I'll have an egg-white omelet with spinach and mushrooms.” Brinkley is also a coffee lover, and her Instagram followers are well aware of that. "Every morning I make myself a cappuccino with a drawing in the foam. I post them to Instagram with the hashtag #christiecappuccino.”

4. She Fits In Small Workouts Throughout Her Day

Brinkley told The Cut that she tries to do little physical activities each day, rather than doing one gym workout. "When I was doing Chicago, I noticed that the second you do any activity and you add your arms as though you're dancing, it revs you up. Whether it's walking down the beach and moving your arms like you're swimming, or picking up rocks and walking with them, you really start sweating and breathing heavily." Brinkley even squeezes smaller exercises when doing the smallest things. “While I'm brushing my teeth, I'm doing leg lifts. When I'm drying my hair, I do all kinds of squats.”

Brinkley does have some exercises that she likes to go to. Brinkley tells Harper’s Bazaar, "Everyone asks if I really use the Total Gym, and I do! It's perfect for stretching and lengthening my body. Culpo shared her skincare routines with Byrdie. She says that she keeps her morning and night routine simple. “I am always trying out new products, so what I gravitate toward is often changing. At night, I usually use an oil and a serum. Right now, I love the Clarins Double Serum. In the morning, I use a Vitamin C serum and an SPF, and, typically, I just rinse my skin with warm water instead of using a cleanser. It is something I swear by—it allows for the oils on my skin from sleeping to absorb naturally.”

Culpo shared some of her favorite skincare products with Byrdie. She says that she uses ones that have vitamins in them. “I have noticed a huge difference in my skin with vitamin C and E. I love the Good Janes H2OMyGod Moisturizer—it's sort of an all-in-one moisturizer that has vitamin C and collagen peptides. As for vitamin E, I actually just purchase the oil from the drugstore. It is super cheap and great to put on any red marks I may get from an occasional breakout. The healing process is so much quicker when I am using Vitamin E oil.”

Abigail is a fan of Pilates. “Group workout classes are so big right now, but I always get nervous around other people in settings like that. I have to go at my own pace without a bunch of distractions so, for me, Pilates with a one-on-one instructor works best. It’s not cheap, but then you also aren’t tempted to skip,” she said She added to Men’s Fitness via Muscle & Fitness that the workout “keeps you long and lean” — and the Mayo Clinic agrees. “I love green juices and smoothies. Sometimes I’ll put some protein powder in the morning—I feel like the mix of vegetables, and vitamins and stuff that’s in them, really gives me a lot of energy in the morning. I love BBQ food—my ultimate cheat is a pulled pork sandwich, sweet potato fries, and macaroni and cheese from this great place in LA,” she told Men’s Fitness.

Ratchford also lifts weights. “Initially, I made the mistake that a lot of girls do and I was only doing cardio. I just really didn’t see too much change in my body. I’ve been listening to my girlfriends who are in great shape and they say you have to do weight training, you have to go in and do squats. That’s my new thing—I’ve been doing some resistance training, circuit training,” she told Men’s Fitness.
